Hot Spot for Saturday Lunch: T. Cook's Fireplace Chef's Luncheon

The fireplace in T. Cook's at Royal Palms Resort and Spa is a hotbed of activity at noon on Fridays and Saturdays, as Sous Chef Bruce Patterson reignites his popular Chef’s Luncheon program.  Part of the original Cooke mansion, the fireplace is today an integral part of the restaurant as T. Cook’s signature paella, spit-roasted chicken and pork tenderloin are prepared there during dinner service. Advanced reservations are required for the six front row seats as Chef Patterson prepares a four course lunch, up-close-and-personal.  Informal and festive, Chef Patterson shares cooking tips and playful banter as he creates the first three dishes with a dessert finale.

The menu varies with seasonal availability or diners’ food allergies, but a recent luncheon featured:

• Spinach, chorizo and Maytag blue cheese tart
• Eggplant cannelloni with pomodoro sauce
• Olive roasted chicken with roasted garlic mash and sautéed asparagus
• Dell’ alba~Pistachio torte layered with lemon-lime chiffon cream and red currant berry sauce

Cost is $50 per person, with an additional $20 for wine pairings. For reservations, please dial (602) 808-0766.  The Chef’s Luncheon is offered on Saturdays at noon.
