Destination Dish: October Recipe of the Month!

Destination Hotels & Resorts has challenged each of their chefs across the country to take part in The Destination Dish. Each month Destination Hotels & Resorts will select one ingredient; each chef must create a recipe around the chosen ingredient and incorporate it into their respective restaurant's menu that month. The ingredient changes every month, so do the menu items!

October's ingredient is the perfect autumn fruit: apples! And, T. Cook's contribution? Chef Travis Watson's decadent Spiced Apple and Gingerbread Upside Down Cake:

Gingerbread Cake Ingredients:

  • 2 cups cake flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 ½ tsp. cinnamon
  • 1 tsp. ground ginger
  • 1/8 tsp. ground cloves
  • 4 oz. butter- room temp
  • ½ cup brown sugar
  • 2 fresh eggs
  • Zest of one lemon
  • ½ cup molasses
  • 1 cup whole milk
  • 1 cup dried cranberries

Gingerbread Cake Preparation:

Spray a cake pan with pan spray. Arrange the cooled spiced apples (*see recipe below) along the bottom of the cake pan. Pour the cake batter on top of the cooked and cooled apples. Place the cake on the center rack of a 325 degrees F, pre-heated oven. Bake for 25-35 minutes or until the cake springs back when you press it. Allow the cake to rest out of the oven for 10-15 minutes before inverting it and removing the cake pan.

Spiced Apples Ingredients:

  • 3 lbs. Granny Smith apples, peeled, cored and sliced thin
  • 2 tbsp. canola oil
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • ½ tsp. nutmeg
  • ½ cup apple brandy
  • ¾ cup brown sugar
  • ¼ cup granulated sugar

Spiced Apples Preparation:

In a large sauté pan, heat the canola oil until it’s very hot. Add the apples and sauté for a couple minutes on high heat. When the apples start to soften, add the spices and continue to sauté for two minutes. Deglaze the pan with brandy; BE VERY CAREFUL! THE MIXTURE MAY FLAME UP! Cook the apples until the liquid is almost completely evaporated. At this time add the sugar and cook for one minute while stirring the apples. Turn of the heat and allow the apples to cool completely.

To Assemble Dessert:

Serve cake warm or at room temperature, with either vanilla ice cream or a dollop of Chantilly cream.
